Maybe Cook would come and be the OC for Pelini, but from what I been told he turned down the offer to be the OC for Zaunbracher if he were to get the job.

Your source is a little off. Zaunbrecher and Cook may have had some initial "what if" talks, but from what I've been told, there was no definitive yes or no from either side.

I'd love to be able to get Brian Jenkins back on the Cajun staff as OC, and then have him take over as head coach when Pelini leaves after leading UL to its first BCS bowl game.
