I'm not a big betting guy and really don't understand all the over / under stuff, but I thought they used stats, etc to come up with the spread / line on the game.

Alpin - 11 TD's / 10 INTS vs. Cajun Defense with most Pick 6's in the Nation. Gautier - 17TD / 2INTS

Guess they didn't see those stats b/f putting out the spread.
