Mama and I were craving something sweet and cold this weekend so we decided to make this Magic Vanilla Ice Cream we saw on Fly Through Our Window (recipe found in Cook's Country Magazine) a while ago. So easy to make & no machine required!
1/2 cup sweetened condensed milk
2 tablespoons Ghirardelli white chocolate chips
1 tablespoon vanilla extract
Pinch salt
1/4 cup sour cream
1 1/4 cup cold heavy cream
1. Microwave condensed milk and chocolate chips in large bowl until chocolate melts, stirring halfway, about 30 seconds. Let cool. Stir in vanilla, salt, and sour cream.
2. With an electric mixer on medium-high speed, whip heavy cream to soft peaks, about 2 minutes. Whisk one-third of whipped cream into white chocolate mixture. Fold remaining whipped cream into white chocolate mixture until incorporated.
3. Place into airtight container and freeze until firm, about 6 hours.
For chocolate ice cream: omit the white chocolate chips and add about 5 tablespoons of chocolate syrup to the condensed milk, vanila, salt, and sour cream.
Makes 1 quart!
