By the way, Cajun Power Garlic sauce is some of the very best I've ever had.

They seem to make a great product (and many of them).

Me and RaiderDan both bought gallons of their signature red garlic sauce when at the SBC hoops tourney.

The open air produce market on Kaliste Saloom (I think it was) was awesome!

I prefer to cook with Tabasco, and add with Louisiana Hot Sauce. I also use Tabasco for Coctail Sauce.

What's up with a Louisiana guy not knowing how to spell Tony Chachere's and Prudhomme?

I never look at the bottle while I sprinkle it on my food.

Amen to that! There's no comparison.

I like Crystal (I believe a NOLA based company) because it is milder than tabasco if you are just sprinkling it on food. Is Ortego sauce still around Acadiana? That stuff was good but extremely hot.

Crystal products are not may favorite. They are a Baumer food product, and many will remember the sign on the Ponchatrain Expressway with the chef surrounding his products with wide open arms.

Baumer foods, after Katrina, moved to an industrial park in Reserve, Louisiana where they still produce most of their sauces, jellies, and mustards. I am grateful the Baumer family did not sell their business to an out of town firm as Copeland was forced to do with Popeyes. Ruth's Chris Steak House also a local legend had a public offering several years ago, and after her death, I believe the business end moved to Atlanta...

The Cajun Hot Sauce Festival in New Iberia is this weekend. A festival where they get together and cook my Ragin' Cajun mascot? Who in the hell thought the pepper was a good idea? If we are stuck with an eatable mascot a good place to look for a sponsor would be at this festival.

Its funny how things tie in, because while Tabasco is not interested in having anything to do with our wonderful pepper they are a main sponsor of the festival. Oh well, I'll probably still go see good ole Percy Sledge for the 7th straight year.

The university has met with Tabasco several times regarding sponsorship. The initial outcome was the Hot & Spicy Golf Tournament which they help sponsor. We are not the only university asking for sponsorship. I was able to view the proposal that LSU sent to Tabasco several years ago...it was pretty impressive. Tulane has also consistently approached them for sponsorships. Remember, most of the Mcllhenny/Simmons clan have homes in the garden district in New Olreans and are tied closer to the New Orleans metro area than Lafayette.

I figured that. A Mcllhenny was king Rex for Mardi Gras this year.
