Rice Dressing Casserole
One of our friends had a barbecue today, so I made this to bring along as a side dish.
This one was easy. The only problem that I ran into was that the top layer of rice was still hard. I?m not sure if it is because it was undercooked or overcooked. Either way, the top layer was hard. I scraped off as much of it as I could, and the rest of it was cooked properly.
In my opinion, it was a little bland. I have a feeling that the reason is because I added more rice than the recipe called for. When I saw ?1 cup of rice? on the recipe, I thought to myself ?There?s no way that?s enough rice! I?ll add more!? So I added more, and it was a little too much. I think that if there was less, you would have been able to taste all of the other flavors a little better. Everyone else seemed to enjoy it. I?m probably just a little too hard on myself.
