Fresh Corn Casserole
I wanted to make mine for supper, so I added a little bit of pasta. It was delicious. I also used Tony Chachere’s seasoning instead of salt & pepper (I swear, they should hire me to advertise for them).
I’m lucky to have neighbors who have gardens. They are always more than happy to push all of their fresh vegetables on me. I got fresh tomatoes from my neighbor, today. I used a tip that I got from a twitter friend to peel them. You puncture an “X” on the bottom of the tomato, and put it in boiling water for a few seconds. When you take it out, the skin peels right off. It reminds me of a bad sunburn being peeled off of a person’s body.
Also, I got great news, earlier this week. I’m pregnant! I took a positive test on Tuesday, but I wanted to surprise my husband. I put the test back into the wrapper, and back into the box to hide it. I made an appointment with my doctor for Wednesday. On Wednesday, everything was confirmed. I got a cookie cake that said “You’re Gonna Be a Dad!” and surprised my husband with it at work. He was so excited! As of today, I’m 5 weeks and 4 days pregnant. The baby is the size of a sweet pea. My due date is February 15, 2011.
