    Chilis has become too big for their britches. 8 years ago the Pinhook location was the number 2 net profit store Chilis in the country. They were able to get the best managers and there was a waiting list to get on there as a server or bartender. Now they expanded to 6 restaurants in a 30 mile radius of each other, and have cut the talent pool was down.

    Chilis does real well in La, Ms, and Florida because those are the only states that allow them to do 2 for 1 all day everyday.

    Chilis menu was at the point where there were way too many items on the menu, thus making it hard to ecxecute in the kitchen, causing long wait times and high food cost and labor. Their menu now id realtively easy to execute.

    Chili's had a great impact on Hops closing. They wanted to put a Macaroni Grill across the street and made them an offer they couldn't refuse. At that point in time Mac Grill was owned by Brinker International who owns Chili's.

    I knew the owner and the management, the books told a different story. You had two businesses in Hops, a restaurant and a micro-brewery. BTW, the former owner is selling real state here in Lafayette.

    Chef's, Mr. Cook and Burger Tyme all local and all went the way of Baja Sports Grill. I used to tear up a Cajun Blaze.

    Double Cajun Blaze w/cheese.......BEST BURGER EVER!


    My buddy and I would stock up on them. We would buy several and freeze them, then we could settle our cravings without leaving the house.

    If anyone wants to spend a pretty penny, Mazen's in the old Catfish Shack is pretty good. Had a great, great after tax season meal over there last thursday night. I definetly recommend. And another thing while Im talking about places to eat. How in the hell can Southside Bakery win best burger? Its not even a burger its a loaf of bread with a patty in the middle. Judice Inn is the best burger in town. It aint the biggest but its the best. Times get it right next year. Im ranting up a storm tonight.
    I have to say that I know Judice Inn is good, but I still like the burgers at Morvants in Youngsville. They are not quite what they were years back as Bero's, but they are still pretty good.

    The "Cajun Blaze" was OUTSTANDING and you could top it off with a TJ Cinnamon roll for dessert!
    Speaking of places shut down, does anyone remember Bonus Burger, which was where Popeye's (S.College@Pinhook) is now? Good burger and GREAT onion rings!

    I think that initially KK was doing great and guess what happened??? (or so I am told) Sugar Busters and South Beach Diets kept the low carbers out---I was in that number!!!!!

    Go have a Cajun Burger at P.J.'s Grill in Crowley - it's nearly the same, including the grilled onions. Peter worked for the Moodys and Burger Tyme.

    I think he also has something similar to the Crawfish Tyme.

    The quality of the food is just not there as it was 10 years ago. Now the beignets and the breakfast there are very good

    hell, c-hawk, i saw that same roach in there a couple of weeks ago. told the fry cook to drop him in the hot grease and put it right in there with my tomatoes. extra crispy!! lol!
