That’s something we never ate. I never knew they were edible until a couple years ago.
I ate some a couple weeks ago.
No one eats it because it causes physical harm harvesting it.
It almost requires a cane knife.
I ate the center stalk, but at the base it is too fibrous. It could probably be cooked down, i ate it raw. The top few inches are very good.
It has a slight sweetness and is a little like celery with the strips removed. It is tubular.
You just peel off the easy to remove outer skin, the hard part is getting past the stickers. Most likely why no one eats it.
Right now its everywhere.
