    I've never made boudin, but far in the past I did to build websites for two meat markets.

    One I watched make sausage the other I watched make boudin.

    I can't accurately recall but am I wrong that (after it was mixed) they made 4 links a minute?

    Im sure a meat market that does it all the time and has the right equipment is much faster than someone who does it occasionally. As with everything else you are paying for your convenience, not theirs. If you add up the cost of the equipment and how many batches you have to make to get it right, you coming out way ahead buying your boudin.
