I highlighted in bold what i think could constitute as NIL. Lets say if the University got a local photo studio to take pictures on game day that the athletes that take part would not be entitled to some of the profits?

That studio could have some agreement with some of the players to take photos with kids and families on game days. They would get some of the money, but also benefit the University by having that kid have a photo with that player.
