Just put this in the smoker. Weather delay screws up my plans for slicing and serving at halftime.

I smoke it at 225 until the internal temp reaches 165.

Pull it off and wrap in butcher paper. I usually spread some wagyu beef tallow on the butcher paper.

Raise the grill temp to 250 and let it smoke until the internal temperature reaches around 200.

Once the brisket passes the probe test (feels like butter) I pull it off, wrap it in a towel and let it sit in a cooler for a couple of hours.

This man knows what’s up.

Its a cut of beef really popular on the west coast. Not sure where to find them here in Lafayette. My father gave me two last year he said he did not like them. I smoked them they were very good.

Next time I am in Costco I will try to find them. If you do smoke one do not smoke it to 200 internal temp I smoked them to 135-140 internal temp.
