Winner of our game plays loser of Texas/Miami scheduled for 12:00 EDT
Winner of above game plays winner of Texas/Miami scheduled for 6:00 EDT

If necessary game should Texas/Miami lose Sundays game.
The committee has freedom to rearrange schedules as it sees fit due to delays (weather). Pretty certain they cannot extend it beyond Tuesday. Unless something has changed they allow a max of three games in a day.
If we play two in a day, it will be Sunday . . .
The 2015 Houston regional had to be adjusted after Saturday was washed out. What ended up happening was that both championship games were scheduled for Monday instead of just the if necessary game.
Sunday had three games (technically four if you consider Houston and Rice going 20 innings in the losers bracket final).

If regional play cannot be completed, the NCAA utilizes the following to determine the regional champion ... and the team that will advance to the super regional round.
No games played -> Best seed
1 -> 3 games played -> Best remaining seed without a loss
4 or 5 games played -> Remaining team without a loss ... which would be the winner of Game #4
6 games played -> Winner of Game #6, unless each teams has one loss ... in which the following is considered ...
1) Head-to-head competition
2) Best seeded team remaining

They do not explicitly say in the rule book, but I have never seen a regional extend beyond Tuesday. The emergency scenarios illustrated in the Host Operations manual have several potential scenarios where Tuesday games are played ... the worst one being Games 6 and 7 (if necessary) played on Tuesday.
