If you have 8-10 vendors on-site, they are "fighting" for customers. I'd also wager that majority of crowd doesn't eat in the stadium; most get snack food such as peanuts or popcorn.
Also, restaurants best profit comes from bar sales, which isn't an option at Cajun Field.
I think it works well for Dean-o's b/c there isn't much competition currently and it's an easy meal to prep & serve. Not sure this model would work well for alot of vendors.
T’ist a restaurant. The gross margins at games and such are way better than at the brick & mortar restaurant.
How about Food Trucks lined up across the top of North end zone levee
App State does this in the stadium on top of their grass hill end zone. The north end zone would be a perfect spot for food truck alley at Cajun Field during games

A Southern Miss fan made a fun-hearted joke on the SBC message boards a few weeks ago in regards to our stadium name, asked if next we'll have the local KC's doing a fish fry inside of Cajun Field.
USM fans have no room to talk about stadiums, except for the deck area and boxes which were renovations their stadium concessions and bathrooms have old jail vibes.

Got me thinking...those dudes would print money at Cajun Field during a game if you ask me. Give me a big ole filet or two of fried catfish, side of either pork jambalaya or potato salad and a slice of Evangeline Maid to sit and watch a Cajuns game with? Yes sir! Wash it down with a cold beer.
Cajun Field needs to up its healthy options too though - they have enough junk.

Jambalaya shop in Lafayette closed. They were not there. Deano's was not there either. The pizza was from Papa John's. I bought one. One of the worst pizzas I have ever eaten. I should have thrown it away. Tasted like cardboard.
