Well, I just did a quick search, as I know this topic has come up before. Below is a link to this same discussion back in 2019.
And yes, I really like the airboat idea, and agree that there are a LOT of possibilites we could come up with. And I also say why not have a 'beausoliel' type figure to go with the gators. Here are some pics that were posted in the 2019 thread:

I had the idea to work a swamp into the design of the new Cajun Field. A poster on this board told me I needed to get off the drugs.
Imagine a swamp with some gators, including Louis and Ana, between a new visitor's locker room and the field on the north side of Cajun Field. Visitors gotta cross a bridge to get into the stadium.
Semi-terrible idea that could work: snapping turtle designed in red/white colors similar to the old USL bulldog. Would be cool to see and more unique than a gator. My dad grew up playing in the marsh and said they were more scared of snapping turtles than snakes and other critters.
Just get a dog. Inexpensive, someone can keep it at home. Train him to fetch ducks in the offseason.
So, we have a Cajun on an air boat with wheels carrying two gators, one red and the other white with the names Louis and Anna.
Why not bring back Cayenne?
Keep it simple, stupid.(KISS!)
Louie and Ana!

Yep. And like I said earlier, I know there is already a gator mascot, but only one. Think how many bulldogs, tigers, etc are out there. Plus, we have a very clear claim to using it as well as Fl. Besides, if we also add Beausoliel would make it truly unique. Let's do it.
