    Sauce is necessary on pulled pork and very good on chicken and ribs. Never on brisket slices - OK if pulled or making a sandwich.

    Good barbecue should be good with no sauce.

    My goal is always to season and smoke mine in a manner that sauce is not necessary. However, I do make a concoction of Sweet Baby Rays, mustard, hot sauce, tequila and lime juice that I put in an empty mustard squirt bottle for when the shredded pork is rolled up in a flour tortilla.

    Exactly. Like a good steak. Salt, pepper and a little char on the out side. So where is the photo of your smoke ring?

    Leftovers after some friends dropped by. Sautéed some onions and had fresh cilantro for tacos.

    All this talk about bbq, going to Bon Creold here in New Iberia tomorrow (today, its after midnight).
    On Sundays they only serve bbq plates. Chicken with a side of brisket is the way to go.
