    After two years in Kansas City, I can tell you their BBQ is just okay. Way overrated if you ask me.

    Yeah, 90 Minutes per pound. At 7 lbs, should put me at 10 1/2 hours. So with putting it on right before 5am, thinking take off at about 3:30 and let rest for a bit before shedding.

    About to put some wings on to have for lunch.
    Yum that sounds good.

    As I eat this banana, I'm feeling 190 degrees of separation.

    Probably, but I mix cayenne in mine. Not just straight salt and black pepper like Central TX BBQ. However, my cooking technique is CTX style.

    All this talk of BBQ got me hungry! Stoped in at Blanchard’s to taste their brisket and ribs. It was absolutely amazing! As usual I had to add a bit of salt but that is very common with my pallet. I will return in the future!

    Anyone remember Ruby's Sunday bbq dinners? Her son Tim opened up Tim's Kitchen on Albertson's Pkwy. He's doing Sunday bbq dinners just like Ruby's used to.

    Ruby's on Rue Louis? Man, I miss that place. I used to go every Sunday in the mid 90's.

    Sauce is necessary on pulled pork and very good on chicken and ribs. Never on brisket slices - OK if pulled or making a sandwich.

    Good barbecue should be good with no sauce.

    My goal is always to season and smoke mine in a manner that sauce is not necessary. However, I do make a concoction of Sweet Baby Rays, mustard, hot sauce, tequila and lime juice that I put in an empty mustard squirt bottle for when the shredded pork is rolled up in a flour tortilla.
