    You have to be more specific about NC BBQ being garbage. In NC their are different types of BBQ. My assumption is that you are talking about Eastern NC BBQ which is all vinegar based. Their BBQ sauce is not actually a sauce at all but more a liquid mixed with Apple Cider Vinegar, Brown Sugar and pepper. Lexington or Western NC BBQ is completely different, this is more tomato based BBQ, this is a more traditional BBQ sauce and is much better than the Eastern Style NC BBQ.

    So saying that NC BBQ is garbage is not really telling the entire story, I can agree with you on the Eastern NC BBQ though.

    The other thing to remember at NC BBQ is that it is all pulled pork. In NC when you go to a BBQ restaraunt, all you will see for the most part is pulled pork.

    My problem with bbq on general in NC (lived here for close to 25 years) is that with few exceptions, it's just a pile of chopped to death (not pulled) meat with little flavor other than a sauce that's just a notch above straight vinegar...east or west. When I've asked for sliced..dry and just flavorless...like I said, there are exceptions, but few and far between...

    Some guys that work Spring say CorkScrew BBQ is the best around there
