Of course there was no replacing the Cajun Chicken, but sounds like the university dropped the ball by trying to find "one person" to replace him. They should have found 3-4 students to try to replace him. One could have been a good dancer, one a funny guy, one a lunatic, etc.
A lot of universities have 4 people wear the mascot costume during a football game. Each one takes a quarter. This allows a fresh body, more energy, different schticks, etc. throughout the game and keeps things fresh. It gets pretty hot in those costumes and after 30 minutes in the sun you're ready to take it off. (SOURCE: good friend who was a college mascot)
One word:
MISTER CAJUN!!!
Our nickname is a group of people. Most universities that have people for nicknames either have a physical representation of said people as a mascot or a mascot that further defines who said people are.
Based on that, these are the top 3 mascot options for this school.
1) Mr. Cajun
2) CatahoULA
3) Bring back Cayenne. Seriously. At least he got us some national pub.

Troy Landry!! Who's with me he can shoot his shotgun when we score!!
most or all of the youtube videos of the Cajun Chicken are actually mine...the radio station emailed me asking my permission to use the videos in their article/video about the cajun chicken.
I WISH i had video of all his routines...but sadly Iphones were not a thing before the 2000s...and i was only able to get decent quality photos/videos of him when he made a return to a UL baseball game some years ago.
But, someone needs to resurrect the cajun chicken and just start going to games...im sure russell can rent out the costume and his "toys" for cheap! and some old fans would get a laugh and some new fans might start going to games just for the chicken! it would take a SPECIAL person to take on that role though...none of the cayenne mascot persons were anything like the chicken.
