Now that we have reached the height of the summer harvest, it is an understatement to say we are spoiled for choice when it comes to fruit and veg. I find myself not knowing where to begin when deciding what to buy and what to cook. Zucchini and corn have both made appearances at the table after getting the full-on grill treatment, but I wanted to try a different method. My brainstorming was all over the map and even included baking a quick bread that bridged the gap between sweet and savory.
