Every four years in Les Sables d’Olonnes, France, thousands of yachts line the banks of the Atlantic to begin the Vendée Globe, a boat race whose course circles the globe in about 75 days. Records state that a Capt. Poupart once participated in the trip; though any direct relation is unconfirmed, François Poupart of Poupart’s Bakery and Bistro used the Vendée Globe sailboats as inspiration for this chocolatey treat.
A light and fluffy, but rich chocolate mousse is coated in a hardened chocolate ganache, then decorated with thin chocolate pieces handcrafted by François himself.
